Which food tradition do you think deserves more recognition globally?
As a food lover and avid traveler, I believe that one food tradition that deserves more recognition globally is Peruvian cuisine. With its diverse range of ingredients, bold flavors, and colorful presentations, Peruvian food is truly a feast for the senses.
One of the key components of Peruvian cuisine is its use of indigenous ingredients that have been cultivated in the Andean region for thousands of years. These include superfoods like quinoa, maca, and chia seeds, as well as unique fruits and vegetables like lucuma, huacatay (Peruvian black mint), and aji amarillo (a type of chili pepper).
Another defining feature of Peruvian cuisine is the influence of various immigrant cultures that have settled in the country throughout its history. From the Japanese influence in the popular dish of ceviche, to the Chinese-Peruvian fusion of lomo saltado, to the African influence in the spicy and hearty stew of arroz con pollo, Peruvian cuisine is a melting pot of flavors and culinary traditions from around the world.
In recent years, Peruvian cuisine has gained some recognition on the global stage with restaurants like Central and Maido in Lima receiving international acclaim, and chefs like Virgilio Martinez and Gastón Acurio helping to spread the word about their country's culinary offerings. However, I believe that there is still so much more to discover and appreciate about Peruvian food.
From the street food stalls of Cusco to the high-end restaurants of Lima, Peruvian cuisine has something for everyone. Some of my personal favorite dishes include the tangy and refreshing ceviche, the rich and hearty causa (a layered potato dish with chicken or seafood), and the spicy and flavorful ají de gallina (a chicken stew with aji amarillo). And let's not forget about the national drink of Peru, the pisco sour, which is made with pisco (a type of brandy), lime juice, egg white, and bitters.
