Who are the most influential persons or organizations in global gastronomy?
Well, that's a tough question! There are so many amazing chefs, food writers, and organizations out there that have had a huge impact on global gastronomy.
One person who immediately comes to mind is the legendary French chef, Alain Ducasse. His restaurants have garnered multiple Michelin stars, and he's known for elevating traditional French cuisine to new heights. Another French chef with a lot of influence is Pierre Gagnaire, who is known for his experimental approach to cooking.
In terms of organizations, the James Beard Foundation is a major player in the culinary world. They host the annual James Beard Awards, which are like the Oscars of food. They also offer scholarships to young chefs and are involved in various initiatives to promote sustainable agriculture and food justice.
The Slow Food movement is another important organization that has had a big impact on the way people think about food. They advocate for locally sourced, seasonal food and are committed to preserving traditional cooking methods and ingredients.
Moving over to Asia, we can't talk about influential chefs without mentioning Japan's Jiro Ono. He's known for his sushi restaurant, Sukiyabashi Jiro, which has three Michelin stars and has been featured in the documentary Jiro Dreams of Sushi. Another major figure in Japanese cuisine is Chef Narisawa of Tokyo's Les Créations de Narisawa, who is known for his innovative use of Japanese ingredients and techniques.
Finally, we can't talk about global gastronomy without mentioning some of the amazing women in the field. Dominique Crenn, who runs Atelier Crenn and Petit Crenn in San Francisco, was the first female chef in the United States to receive three Michelin stars. Ana Ros, of Hiša Franko in Slovenia, was named World's Best Female Chef in 2017 and has put Slovenian cuisine on the map.
Of course, there are many, many more chefs and organizations that have contributed to the global culinary landscape, but these are just a few of my personal favorites. I'm excited to see what new trends and innovations will emerge in the coming years!
