Yes, it is true that the Scottish Highlands have a thriving whisky industry! Whisky is a special type of alcoholic drink that is made from grains like barley, wheat, or rye. In the Scottish Highlands, they have been making whisky for over hundreds of years and it's a very important part of their culture.

The highlands have the perfect climate for making whisky because they have lots of cold, rainy days which helps the whisky mature better. Some of the most famous whisky brands are made in the Scottish Highlands like Glenfiddich, Macallan, and Talisker.

To make whisky, they first need to malt the barley. This means they soak it in water, then let it start to sprout. Once the barley has sprouted they dry it out which adds a smoky flavor to the whisky. Then, they grind up the barley and mix it with water to make a mash. This mash is then put into big tanks where they add yeast which helps the barley ferment into alcohol. After a few days, the mash now becomes whisky!

Once the whisky is made, it needs to be aged in barrels. The barrels are usually made out of wood, like oak, and add to the flavor of the whisky. The longer the whisky is aged, the smoother and more flavorful it becomes. Some whiskies can be aged for over 20 years!
